In our opinion the best configuration for a 48 is a 4 burner w/ double griddle if you can find it. Our second favorite configuration is either a 6-Burner w/ single griddle or a 4-Burner w/ French Top depending on the user. Barbecues are an excellent way to cook when outdoors, but we never recommend a grill section indoors unless taste is the only consideration… They are a smokey mess that is a pain to clean, so most people do not use them. Even when they are pretty clean they still smoke like crazy and require the fan to be on until completely cool. Likewise we do not recommend an 8-burner configuration except for pots & pans only professional chefs… Most people cannot manage so many burners at the same time and few people need more than 3 or 4 burners simultaneously.
